- 50 grams of walnut kernels
- 1 tablespoon of salt (can be increased or decreased)

- 4 glasses of flour
- 21 grams of fresh yeast (1/2 packet)
- 2 tablespoons of warm milk
- ½ teaspoon of granulated sugar
- 1.5 cups of warm water
- 1 teaspoon of salt

How to Make Zaatar Bread?
For thzaatar bread, first, prepare the breakfast after. For the breakfast zaatar mixture that you will spread on the bread, pull off the tall mountain thyme and rub it with your hands.
Toast the walnuts, sesame seeds, and sunflower seeds in separate pans without adding oil until they turn a light color. Crush the roasted pumpkin seeds in a mortar and grind them into powder. Bring everything together and fry for 1 minute, then remove from heat.
Put the roasted yellow and white chickpeas in the food processor and grind them once. Let them crumble, but not completely turn to dust, because we are not done with them yet.
Add the extracted thyme, sumac, the toasted pumpkin seeds crushed in a mortar, salt, and the oil seeds toasted briefly to the food processor. Make two rotations.
Add the roasted chickpeas that you crushed once in the food processor andblend one last time, then put the prepared breakfast cereal mixture in a jar.
For the bread dough; Mix the fresh yeast that you kept in the refrigerator with warm milk, after bringing it to room temperature, and let it become active for 5 minutes at room temperature.

Gradually add lukewarm water and knead the initially liquid dough until it comes together. Add a little more flour if needed.
